Tofu Quinoa Spinach Salad [V/GF, Vegan Option]
Quart size dinner salad. Quinoa tossed with roasted tofu, diced local cucumbers, green onions, shaved local zucchini, and diced roasted red peppers, on a bed of local spinach, topped with feta cheese. Served with a side of lemon vinaigrette. Vegan option available.
